1. Cook the rice according to the instructions on the package.
2. Finely chop the chili (adjust the amount according to the desired strength). Peel and finely chop the garlic. Peel, halve and thinly slice the red onion. Cut the green beans into thirds.
- 3. Heat butter and rapeseed oil in a wok or frying pan. Fry the minced pork until golden and crispy, about 5 minutes. Crumble the minced pork with a spatula.
- 4. Add the chili, garlic, red onion and green beans. Fry for another 5 minutes.
- 5. Stir together oyster sauce, ketjap manis, brown sugar and fish sauce. Pour the sauce over the minced meat mixture and simmer for about 3 minutes.
6. Coarsely chop the Thai basil and turn down just before serving.
Serving:
1. Cut the pak choi lengthwise. Fry the cut side down in half the butter & rapeseed oil for about 4 minutes on high heat. Set aside.
2. Heat the remaining butter & rapeseed oil. Lightly toast the sesame seeds. Crack the eggs and fry until the edges are crispy and the yolk is still creamy.
3. Serve Pad kra pao with rice, pak choi and fried eggs.
